Savory Couscous


A tasty couscous preparation to go with almost any main meal. Matches particularly well with poultry. This was the result of experimentation, and the amounts may not be precise; play around with the recipe and tweak it to your personal tastes!


  • 1 box plain couscous, prepared (usually req. water or stock, 1 Tbsp butter or olive oil, and some salt)
  • 2 Tbsp. olive oil
  • 4 cloves garlic, minced
  • 1 red bell pepper, finely chopped
  • ½ c. mushrooms, finely chopped
  • ½ c. grated Parmesan cheese
  • 4 Tbsp. tomato sauce
  • 2 Tbsp. dried parsley
  • 1 tsp. onion powder
  • 1 tsp. Italian seasoning (I used Garlic & Herb seasoning)
  • ½ tsp. paprika
  • ½ tsp. salt
  • ¼ tsp. dill
  • ¼ tsp. ground black pepper


  1. Prepare couscous according to package instructions. (Bring water or stock with 1 Tbsp butter or olive oil and ¼ tsp. salt to a boil, stir in couscous, remove from heat and let stand 5 minutes.)
  2. Over medium heat, saute garlic, mushrooms, and red pepper in olive oil. Add this to your prepared couscous. Add Parmesan cheese, tomato sauce, parsley, onion powder, seasoning, paprika, salt, dill, and black pepper. Fluff and serve as a side. *Leave the Parmesan cheese off for a vegan preparation of this dish.
